At Watermark Beach Resort, culinary delights await at the renowned 15 Park Bistro. Situated within the resort, this exquisite dining establishment captures the essence of fine dining in a relaxed and inviting atmosphere.

Chef Nick Atkins embarked on his culinary journey at a tender age, finding his passion in the kitchen of his uncle’s restaurant, the Inn on Lake Bonavista in Calgary. By the time he reached 15, Chef Atkins had already immersed himself in the intricacies of restaurant operations, devoting his nights and weekends to honing his skills.

Fuelled by a genuine love for food, he enrolled at the Southern Alberta Institute of Technology, becoming the youngest student in his culinary program. There, he not only acquired technical expertise but also discovered his own unique style and perspective as a chef.

After graduation, he put his newfound culinary prowess to work at the renowned La Chaumiére in Calgary, further refining his craft. Chef Atkins continued to expand his horizons, serving as a sous chef on a large-scale catering team, where he learned the art of creating delectable meals for crowds, including at the Calgary Zoo.

We were sure lucky to sit down with Chef Nick before dinner to share similar passions. Steve, our Co-Founder, Photographer, and Red Seal Chef, was over the moon to connect with someone who had such a deep understanding and love for the culinary arts. As they exchanged stories and experiences, it was evident that both chefs shared a genuine enthusiasm for creating memorable dining experiences.

Chef Nick’s journey and dedication to his craft resonated with Steve, inspiring a lively conversation about their culinary philosophies and the art of crafting exquisite dishes. The meeting between these two talented chefs was a serendipitous moment that sparked creativity and camaraderie, laying the foundation for an unforgettable dining experience at 15 Park Bistro.

We were fortunate to secure an amazing spot on the patio, allowing us to relish the stunning views while being caressed by the gentle lake breeze as we embarked on a culinary adventure.

The menu at 15 Park Bistro beckoned with a delightful array of options, tempting me with the Lobster Mac & Cheese. However, Chef Nick had us captivated with his recommendation—the Vegan Mushroom Risotto, artfully crafted using a medley of wild and cultivated local mushrooms. To complement our choices, we also decided to indulge in the AAA 12OZ ribeye, expertly cooked to perfection.

Sharing both dishes, Steve and I revelled in the exquisite flavours that danced on our palates.

As an accompaniment, Chef Nick’s suggestion of the Lakeboat Pinot Noir proved to be a brilliant pairing, enhancing the culinary experience with its harmonious notes. Each bite transported us to a world of the freshest regional flavours, expertly prepared and thoughtfully presented.

Our meal at 15 Park Bistro was nothing short of extraordinary, leaving an indelible impression of remarkable tastes and an unforgettable lakeside dining experience.

We were so enamoured by the incredible dinner experience that we couldn’t resist making a plan to continue the indulgence the following morning. As we awoke to the breathtaking views from our patio overlooking the serene lake, we knew that this patio was made for an extraordinary breakfast.

Our takeout order was carefully chosen, encompassing the best of both sweet and savoury.

The Sweet Belgium Waffles, adorned with luscious fresh strawberries, bananas, a drizzle of Canadian Maple Syrup, and a dollop of whipped cream, topped with delicate shavings of white chocolate, were a divine treat for our taste buds.

I didn’t want to miss out on my lobster fix from the night before, so I decided to make up for it with the Lobster Eggs Benedict, a decadent twist on a breakfast classic. The combination of succulent lobster, perfectly poached eggs, and rich hollandaise sauce made for an unforgettable morning feast.

Breakfast on the patio overlooking the lake was the perfect way to start our day, leaving us with cherished memories of indulgence and the anticipation of future visits to Watermark Beach Resort.

As BC Wine Ambassadors, our passion for exploring Osoyoos led us on a delightful journey to discover three exceptional wineries that had eluded us thus far.

Our first stop was the Red Barn Winery at Jagged Rock, where we were captivated by the rustic charm and the breathtaking vineyard views. Perched on the Black Sage Bench, the vibrant red barn of Red Barn Winery at Jagged Rock stands out prominently against the Okanagan Valley backdrop.

Our journey led us to Lakeside Cellars, where we were eager to indulge in their extraordinary wines while basking in the awe-inspiring vistas of the lake. Stepping into their newly built, stunning tasting room, we were immediately greeted by stunning views that showcased the beauty of Osoyoos Lake in all its splendour.

Our final stop was Liber Estates, a welcoming haven where we indulged in a remarkable tasting experience. Founded by Mike and Nicole Dowell, the winery embodies their dedication to organic practices and the creation of Certified Organic premium wines. We were especially thrilled by the Hello Sunshine wine at Liber Estates, which offered a delightful surprise – it was conveniently packaged in a can. This feature made it the perfect selection for enjoying on the many beautiful beaches of the Okanagan, where recent regulations now allow alcohol, provided it is not in glass containers. With Hello Sunshine’s can packaging, we could relish a worry-free experience without sacrificing the wine’s exceptional taste.
