Venturing a mere 2 kilometers from Elysia, the landscape transitions to embrace two more vineyards—Trestle Beach and Canyonview. The iconic Kettle Valley Rail trestle can be seen from these vineyards, setting a picturesque backdrop that influences the growth of the grapes. These vineyards, adjacent to each other, mark a trilogy of distinct terroirs.

“The nuances are quite obvious to each other. They’re different, but they’re like siblings. You can tell that they’re the same, but they are not the same deep down, once you start to get to know them,” Sébastien, the winemaker, mused.

At Elysia Vineyard, the Syrah grape finds its haven, basking in the early and midday sun that graces this unique site. As the sun bathes the vines, the rocky terrain serves as an oven, nurturing the grapes to full maturity. This distinctive terroir is embodied in the lowest terrace of the steep slope—a location marked by glacial till and decomposed granite soil, a recipe for crafting Syrah of unparalleled character.

Short for Pétillant Naturel, these wines are a testament to the history of winemaking, harkening back to a time when the craft was guided by instinct and an intimate connection to the land.

Unlike Champagne or traditional sparkling wines, Pét-Nats eschew the elaborate second fermentation process involving added sugar and yeast. Instead, they pay homage to the natural fermentation process.

As Sébastien, the winemaker, elucidates, “It’s ancestral method sparkling wine. Basically, it’s how sparkling wine was originally made. You only bottle your wine during the primary fermentation.”

The result is a wine that encapsulates the unadulterated essence of the grapes and the terroir from which they hail.

The making of Pét-Nat requires a keen understanding of the fermentation process, as it’s a delicate dance between timing and intuition. The natural fermentation is carefully monitored, and the wine is bottled while the fermentation is still active, capturing the live essence of the grapes. The result is often a slightly cloudy appearance, a lower alcohol content, and a vivid representation of the vintage—a snapshot frozen in time.

Sébastien’s passion for this technique is palpable as he describes the process: “Definitely, it’s a little bit more challenging to achieve the carbonation. In the traditional method; there’s lots of, I would say, science involved. This is more instinct.”

It’s not uncommon for Lightning Rock Winery to begin their bottling process at two in the morning, a testament to their dedication to crafting these unique expressions.
