This distinctive terroir is embodied in the lowest terrace of the steep slope—a location marked by glacial till and decomposed granite soil, a recipe for crafting Syrah of unparalleled character.

Unlike Champagne or traditional sparkling wines, Pét-Nats eschew the elaborate second fermentation process involving added sugar and yeast. Instead, they pay homage to the natural fermentation process.
As Sébastien, the winemaker, elucidates, “It’s ancestral method sparkling wine. Basically, it’s how sparkling wine was originally made. You only bottle your wine during the primary fermentation.”

The making of Pét-Nat requires a keen understanding of the fermentation process, as it’s a delicate dance between timing and intuition.
